Ingredients

140 g all-purpose flour
20 g potato starch
80 g block margarine
80 g cane sugar (Demerara)
2 g salt
Zest of 1/2 orange
60 g rolled oats
16 g water
200 g fresh raspberries
Crumble bars are small pastries perfect for breakfast or snack. Crumble means to crumble; the mixture, which may seem similar to a shortcrust pastry in ingredients, is not compact but is crumbled into the mold, creating a rustic effect. We also add raspberries and oats to obtain super tasty bars.

Preheat the oven to 180หšC fan. In a bowl weigh the cold block margarine cut into cubes from the fridge together with the flour and potato starch. In another bowl weigh the sugar, salt, orange zest and rolled oats. By hand (or in a stand mixer with the paddle) mix the margarine and dry ingredients until you obtain a sandy consistency.

Then mix the ingredients from the other bowl with the sugar etc. Add them to the sandy mixture of margarine and flours.

Add the water. Mix until you obtain a moist mixture that binds together, but it is not necessary to form a dough.

Take the mold and roughly crumble 30 g of crumble into each cavity. Add 3 raspberries in pieces to each bar.

Then close with about another 25 g of crumble. Add 1 or 2 raspberry pieces on top, depending on the size of the raspberries.

Bake in the oven at 180หšC fan for about 20 minutes. Let cool at room temperature for 30 minutes then remove the bars. If desired, dust with a little powdered sugar.

Storage

Store in a container at room temperature for 1 day or in the fridge for 3-4 days.

Tips

To make them richer you can also add nuts. You can replace cane sugar (Demerara) with granulated sugar or muscovado sugar. You can replace or omit the orange zest The mold used is Silikomart SF110 Silicone Nr.7 Rectangles 87x48 h 24 mm. Very easy to prepare and if you want to speed up the process you can also bake in a single larger pan and cut the bars after baking.
