Ingredients

DOUGH
350 g all-purpose flour
70 g granulated sugar
10 g baking powder
2 g salt
50 g coconut oil
245 g plant-based milk
210 g frozen berries
SYRUP
50 g granulated sugar
50 g water
GLAZE
20 g lemon juice
80 g icing sugar
Scones are traditional English biscuits. The classic ones are usually served with jam and whipped cream but today we'll see them with added berries and a lemon glaze.

Preheat the oven to 190หšC static. Prepare a baking tray with baking paper or a silicone mat. Take the frozen berries, weigh them in a bowl and leave at room temperature for about 15 minutes. Prepare the dough. In a bowl weigh the dry ingredients: flour, sugar, baking powder, salt, mix with a whisk or sift if there are lumps. Pour in the milk.

Mix lightly with a spatula. Then melt the coconut oil and add it to the dough, now mix with the spatula or by hand until you obtain a compact mixture but do not knead for long, just combine the dry ingredients with the liquids and fat.

Add the berries and mix roughly. Transfer the dough to a floured work surface, sprinkle a little flour on top and flatten the dough slightly with your hands to form a round shape. Keep a thickness of about 2-3 cm.

Cut into 8 equal wedges and transfer to the baking tray.

Bake at 190หšC static for about 28 minutes, then set to grill at 250หšC for 2 minutes to brown the surface. While they bake prepare a syrup by weighing 50 g granulated sugar and 50 g water in a small saucepan and heat to about 80 degrees. When the scones are baked remove the tray from the oven and brush them all with the syrup while still hot using a brush. Let cool at room temperature for half an hour. Meanwhile, in a bowl mix together the lemon juice with the icing sugar to create a runny icing and then use a teaspoon to drizzle it in stripes over the scones. Transfer them to a platter.

Storage

Store in the refrigerator up to 3-4 days.
