Ingredients

3 apples
230 g plant-based milk
100 g seed oil
120 g white plant-based yogurt
130 g cane sugar (Demerara)*
2 g salt
240 g all-purpose flour
14 g baking powder
2 g ground cinnamon
50 g pecan nuts*
Pecan nuts to taste for decoration
A timeless classic: the apple cake, simple, quick, beautiful and tasty, suitable for all occasions, a dinner, snack or breakfast.

Preheat the static oven to 180ยฐC. Line a 22 cm diameter round cake tin with baking paper on both the bottom and sides. Wash and peel the apples, core them and cut 2 apples into small cubes while the third into slices for decoration. In a bowl weigh the yogurt, milk, oil and mix well with a whisk.

In another bowl whisk together the sugar, salt and the dry ingredients, then the flour, baking powder, cinnamon. Pour the liquids over the dry ingredients and mix until you obtain a smooth and homogeneous batter.

Add the diced apples and coarsely chopped nuts and mix with a spatula. Pour the batter into the mold and level.

Decorate with the apple slices and pecan nuts around the edge. Bake at 180ยฐC for about 30 minutes.

Let cool at room temperature for about half an hour, then remove the cake from the tin, transfer it to a plate and decorate with powdered sugar.

Storage

Store at room temperature for 2 days under a glass dome or container. In hot periods keep refrigerated. Alternatively slice and freeze for up to 2 months, storing in a container.

Tips
