DOUGH
7 g instant dry yeast or 21 g fresh
195 g plant-based milk
90 g granulated sugar
5 g salt
375 g all-purpose flour
75 g margarine block
FILLING
20 g margarine
100 g cane sugar (Demerara)
10 g ground cinnamon
GLAZE
100 g icing sugar
20 g water
Cinnamon rolls are brioche-like rolls filled with sugar and cinnamon, soft and fluffy and decorated with a sugar glaze.

In the stand mixer bowl weigh the lukewarm milk and the yeast, mix to dissolve it well. Then add sugar, salt and flour.

With the hook mix for 5 minutes at medium speed. Then add the room-temperature margarine cut into cubes little by little, add the next piece when the previous one has been incorporated into the dough, always mixing at medium speed.

It will take about 15-20 minutes. You need to obtain an elastic dough.

Then make a ball, place it on a work surface, cover the dough with cling film or a cloth and let it rise until doubled, about 2 h at room temperature.

Roll out the dough with a rolling pin until you obtain a rectangle of about 50x30cm. Brush with melted margarine, then sprinkle sugar and cinnamon mixed together.

Then roll the dough from the longest side to form a log. Then cut into rolls with a thread to obtain a clean precise cut. Pass a thread under the roll, cross it, pull and cut.

Make rolls of about 5-6 cm, you should obtain 9 rolls. Arrange the rolls in a 20x20cm square baking tin, greased and placed on top of a baking tray with parchment paper.

Cover with cling film and let rise for another 2 h at room temperature. Preheat the oven to 190ยฐC conventional. Brush the risen rolls with a little plant-based milk, then bake at 170ยฐC conventional for 25 minutes. Cool at room temperature, remove from the tin. Decorate with the glaze: mix sugar and water together and pour over the cinnamon rolls. They are now ready to be served.

Storage

Store at room temperature in cold months or in the refrigerator in warm months, in a closed container or under a glass dome up to 2 days.
