400 g plant-based whipping cream
60 g pistachio paste
Chantilly is one of the pillars of pastry. The true chantilly is the French chantilly and is made only of cream, powdered sugar and vanilla, all whipped together. Today we will see it flavored with pistachio, therefore without vanilla, and without added sugar since the plant-based cream is already sweetened. The cream must be cold from the fridge to be whipped well; it is recommended to place the pack in the refrigerator the day before. The pistachio paste can be purchased or made at home; it is 100% pistachio paste and contains no other ingredients. Here I explain how to make it at home. Weigh the cold cream from the fridge into a bowl, add the pistachio paste.

Whip for several minutes with electric beaters or in a stand mixer at medium-high speed until the cream is well whipped, aerated, stable.

Storage

Store in a piping bag or in a container in the refrigerator for up to 3 days.
