Calculate mixture quantity based on the pan
Do you want to make a sponge cake in a larger/smaller pan but don't know how to calculate the quantities? Often online you find ready-made tables to know the quantity to make based on the pan size, but these tables are often for traditional cakes and sponge cakes since they are based on the number of eggs to use; furthermore the quantities are indicated according to the recipe of whoever created the table. But what if my recipe is different? if I don't use eggs? How do I calculate the quantities? It's all a matter of math, so you need to do some calculations, but nothing too complicated.
Let's calculate
EXAMPLE: We have the recipe for a sponge for a round pan with a diameter of 18 cm and we want to make it in a round pan with a diameter of 30 cm, and we want it to have the same height: 1) calculate the area of the 18 cm diameter round pan: FORMULA: A = π x r² A = area of the circle π = Pi = 3.14 r² = radius squared, the radius is half the diameter A = 3.14 x 9² = 3.14 x 81 = 254.34 cm² 2) calculate the area of the 30 cm diameter round pan: A = 3.14 x 15² = 3.14 x 225 = 706.5 cm² 3) calculate the coefficient: Area 30cm : area 18 cm = coefficient 706.5 : 254.34 = 2.77 If instead you need to go from diameter 30 to diameter 18, thus from a larger pan to a smaller one, you must divide the smaller result by the larger one. 4) Multiply this coefficient by all the grams of all the ingredients of the 18 cm pan recipe to find the quantities for the 30 cm pan. example: 150 g sugar x 2.77 = 415.5 g sugar In the 30 cm pan you will need to use 415.5 g of sugar Proceed in the same way to calculate all the other ingredients. If you have a pan of another shape, just calculate the area using the correct mathematical formula, and then derive the coefficient as done in point 3). e.g. square pan 15×15 = 225 area e.g. rectangular pan 15×25 = 375 area
