Pastry is not just mixing ingredients together, pouring into the pan and baking. You need to know why things happen, or don't happen. Pastry is chemistry; there are reactions that occur by combining certain ingredients together, at specific temperatures or through mechanical agitation. It is therefore important to study this side of pastry as well to better understand how a recipe or a preparation method works. Today we talk about emulsion.
